Method:
The wild and scorching Maremma, the warm climate and sandy soil overlooking the sea offers a great tasty wine with good structure and intensity.
In this climate, Sangiovese expresses its character in the variety of ripe wild berries and complex tannins.
It requires an early harvest due to the dry climate. Traditional red winemaking and ageing in oak barrels and French oak barriques. The wine rests in the bottle to refine its robust and vigorous character.
Aroma:
Intense ruby red with garnet highlights. An intense and lingering aroma, with overtones of sweet violet, raspberry and pomegranate typical of the Mediterranean scrub.
On the palate it is warm, with mineral earthiness, has good acidity and alcoholic content, lingering with marked and balanced tannins.
Pairing:
These characteristics make it ideal with wild boar appetizers, grilled bluefish and sardines, vegetable soups, game stews, grilled red meat, grilled lamb, mature cheeses, dried fruit.
