| Made using grapes from Castelnuovo Berardenga, Chardonnay di Castello di Monastero is a white wine boasting particular structure and intensity. The Chardonnay grapes are vinified white - with immediate separation of the skins from the must. Alcoholic and malolactic fermentation processes both take place in small French oak barrels. The wine remains in the barrel overall for about seven months and, after long refinement in the bottle, acquires a fine, imposing and complex bouquet with hints of spices and dry fruit. It can be aged for some considerable time in the bottle and its evolution after serving in the glass recalls great red wines. The ideal serving temperature for appreciating the quality of this wine should not be too chilled (around 10 °C). |
